If you prefer to leave the peels on when baking, this is the apple pie recipe for you. Our recipe testers loved how easy this pie was to assemble thanks to just a couple shortcuts. Purchased dough forms the crust while the filling comes together in just one bowl. This no-peel apple pie is our favorite way to showcase sweet red apples.

No-Peel Apple Pie Ingredients

Here's a quick look at what you'll need to make this shortcut apple pie.

  • Crust: Look for a 15-ounce package containing two pie crusts in the refrigerated section of your grocery store.
  • Apples: You'll need six large unpeeled apples for this recipe. We like to use red-skinned apples like Honey Crisp, Cortland, or Jonathan apples. Here's our guide to the best apples for pie.
  • Lemon Juice: Soaking the sliced apples in a mix of water and lemon juice before adding them to the filling helps prevent the apples from browning.
  • Sugar: We used 1/2 of sugar in the filling to sweeten the apples. If your apples are on the sweeter side, you can use slightly less sugar.
  • Flour: Adding all-purpose flour thickens the filling and helps prevent it from being too watery.
  • Spice: Apple pie spice is a blend of cinnamon, nutmeg, and all spice. Some blends may also include cloves, ginger, or cardamom.
  • Cream: Glazing the crust with cream before putting it into the oven helps it become golden brown.
  • Coarse Sugar: Sprinkle the top of the pie with coarse or granulated sugar before baking.

How to Make No-Peel Apple Pie

The full instructions are below, but here's a glance at how to make this homemade apple pie.

  1. Prep Ingredients: Let the pie crusts come to room temperature. Slice your apples and soak them in a water and lemon juice mixture.
  2. Mix the Filling: Mix together the sugar, flour, and apple pie spice. Drain the apples well and add them to the bowl.
  3. Roll the Crust: Roll the two crusts together and place them in a pie plate. Let the extra crust hang over the edge.
  4. Assemble: Spoon filling into the crust and fold the edges of the pie dough over the top.
  5. Bake: Glaze with cream, sprinkle with sugar, and bake until golden.

Ingredients

  • 1 15 ounce package folded refrigerated unbaked pie crust (2 crusts)

  • 6 large apples

  • ½ cup water

  • 2 tablespoon lemon juice

  • ½ cup sugar

  • 2 tablespoon all-purpose flour

  • 1 ½ teaspoon apple pie spice

  • Whipping cream or milk

  • Coarse and/or granulated sugar

  • Whipped cream (optional)

Directions

  1. Let pie crusts stand at room temperature according to package directions. Meanwhile, core and slice unpeeled apples (you should have 8 cups). In a large mixing bowl combine apples with water and lemon juice; toss to coat.

  2. For filling, in a large mixing bowl stir together 1/2 cup sugar, flour, and apple pie spice. Drain apples well; add to sugar mixture and toss gently to coat. Set aside.

  3. Unfold one pie crust. Place on a lightly floured surface. Unfold the second crust and place on top of the first. Roll the two crusts together from center to edge into a 14-inch circle. Ease the pastry into a 9-inch pie plate, letting crust hang over the edge.

  4. Spoon apple filling into the pastry-lined pie plate. Fold the pastry up and over the filling, pleating the pastry to fit. Brush crust with whipping cream or milk. Sprinkle the pie with coarse and/or granulated sugar. Cover the edge of the pie with foil to prevent overbrowning.

  5. Bake in a 375 degree F oven for 30 minutes. Remove foil. Bake about 30 minutes more or until crust is golden. Cool slightly on a wire rack before serving. Serve pie while warm with whipped cream, if desired. Makes 6 to 8 servings.
